Insight Employment are recruiting for a career driven Chef de Partie on behalf of our client in Cranfield, Bedford.

The Role: -

As a Chef de Partie you will be working with the Sous Chef to maintain standards set by the Company Operating Standards, ensuring kitchen hygiene standards are without exception adhered to.  Ensuring that guests receive at all times through effective communication, with all departments, the highest level of customer care.  Ensuring all costs are kept in line with the kitchen budgets agreed by the company.

Duties and responsibilities include: -

  1. To ensure that all working areas are kept clean and tidy at all times.
  1. To prepare, cook and serve food as specified by the Head Chef and to ensure that the food meets the appropriate specification.
  1. To assist the sous chef to supervise the Commis Chefs in all food preparation and food production in kitchens.
  1. To assist the Head Chef in ensuring HACCP is in place to ensure due diligence in preventing an outbreak of food poisoning. Follows good preservation standards for the proper handling of all food products at the right temperature.
  1. Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met.
  1. Need to be able to assist the sous chef on planning, organisational and time management.
  1. When accepting deliveries, care must be taken to check off items against the delivery note and the original order and to only accept items if they are of the correct quality and standard.  The number of items must also be checked. Any discrepancies must be marked on the delivery note and drawn to the attention of the Head Chef.
  1. To assist in food ordering by informing the Head Chef when stocks are reaching par stock levels.
  1. Ensure good communication throughout the kitchen department at all times.
  1. To ensure the effective control of refrigeration and dry store goods to ensure that there is no waste.
  1. To ensure that all areas of responsibility are kept sanitised and free from dust and debris at all times, following strict and pre-agreed cleaning schedules.
  1. To take an active role as a team member, welcoming new colleagues, assisting with their training and participating fully in all ongoing training initiatives. Should be able to set an example to others for personal hygiene and cleanliness on and off duty.

A chef de partie needs to have the following skills and qualifications: -

Hours: -

37.5 hours per week

A mix of days, evenings, weekends.

Salary: -

£28,500K per annum.
